Certifications

We're Serious About Pizza™, we're certified Pizzaioli instructors. NAPCA​ is the 2nd official Scuola Italiana Pizzaioli school in the USA located just outside Chicago, IL. Currently there are only 20 schools worldwide.

Non-Certification Courses

We offer 1 and 3 day courses for those who want to take their pizza knowledge to the next level. The ​1 day​ course will provide the confidence to make great pies and leave you with a better understanding of classic Italian pizza. The 3 day course is for the more advanced pizza maker and covers dough chemistry and the functionality of ingredients.

Certifications

Students of our 5-day Pizzaiolo Certification Course are taught theory and practical hands-on learning each day, according to the guidelines and curriculum of the Scuola Italiana Pizzaioli, in Italy. Students will learn the history of classic Italian pizza, the chemistry ofItalian doughs, preparation of traditional ingredients for toppings, training on traditional Italian and American pizza, as well as the equipment and proper dough stretching, topping, and baking techniques.

Non-Certification Courses

The 1 day immersion course is a deep dive into most styles of American and Italian pizza. This class is split up into a theory portion along with hands-on experience with hand stretching, topping, and baking. Students will learn the specific dough process with the traditional mixer, pizza creation method, and baking techniques on the appropriate oven for that style.

The 3-day immersion wood fired class will discuss and make doughs with Biga, Poolish, Pasta di Riporto and Direct method. After taking this course, you will have a deeper appreciation for the craft. This class is similar in structure to the 5 day course but there is no exam at the end.

They flew in Scuola Master Instructor,  Fabio Sebastiani from Italy, and I learned so much from him. Had a fun night learning to make a Chicago Tavern Style pizza. This is a hands on class. We made our own dough and sauce. Then we rolled it out and watched it bake. They provided salad and dessert too! We went home with the dough we made and extra sauce so we could make another pizza at home. Fun class in a world class facility. Highly recommend you try it for date night or with a group.
